Greek Turkey Burgers with Tzatziki Sauce

It is a rare day when I prepare an actual ground beef burger at my house.  We have become accustomed to turkey burgers and we love them.  I have tried a wide variety of turkey burgers (look for my Southwest Turkey Burgers coming soon!) but this combo is one of my favorites.  The greek flavors pair well with the mild turkey.  You can even sneak a little spinach in for the kids!  These burgers pair well with my Mediterranean Potato Salad for a healthy, filling meal.

Greek Turkey Burgers (makes 10-12)

Turkey Burgers:

48 oz. ground turkey (this is the larger size of Jennie-O or Honeysuckle — might as well freeze the extras if you don’t need all 8)

10 oz. chopped frozen spinach

1 medium red onion, finely diced

1 1/2 tsp. Greek seasoning

4 oz. reduced fat feta cheese crumbled (more or less to taste)

1 egg

salt and pepper

whole wheat hamburger buns or 100 calorie whole wheat thins

Tzatziki Sauce:

1 cup plain greek yogurt

2 Tbsp olive oil

juice of 1/2 of a lemon (and zest)

1 tsp dried oregano

1/2 – 3/4 tsp garlic powder or minced garlic

1/4 cup grated cucumber

fresh parsley and mint, chopped (optional)

Directions:

Mix all ingredients for tzatziki sauce in medium bowl; chill until time to serve.  For turkey burgers, microwave frozen spinach as directed on the box.  Squeeze spinach dry with paper towels.  In large bowl, mix all other ingredients.  Use clean hands to make sure everything is mixed together evenly.  Mixture should make 10-12 evenly sized burgers.  Preheat grill to 400 degrees. Cook approximately 6-7 minutes per side or until cooked through.  Top with shredded lettuce and tzatiki sauce.
