Easy Individual Fruit Crumble

Access to fresh, tasty, inexpensive berries is such a great part about summer.  This is such an easy dessert to prepare for your family or for a whole group of people (provided you have enough ramekins, but you can bake it in a large dish if you don’t!).  Crumbles, crisps, cobblers…they are all delicious but I prefer a crumble.  What’s the difference?  A crumble is a dessert in which streusel like (sugars, flour, oats, butter, spices) topping bakes on top of fruit, a crisp is similar to a crumble but the topping lacks the oats so it bakes more crispy like a cookie topping, and a cobbler consists of a biscuit type topping backing on top of the fruit mixture.  Really you can’t go wrong with any of them!  As long as you pick up some fresh fruit at the grocery or the farmer’s market, you are likely to have the rest of the ingredients on hand.  Enjoy!

Easy Individual Fruit Cobbler (Serves 4)

Ingredients:

2-3 cups fresh or frozen fruit, divided into four (berries, cherries, peaches, nectarines, plums)

1/3 cup flour

1/2 cup oats

2 Tbsp sugar

2 Tbsp brown sugar

dash of cinnamon or nutmeg (optional)

6 Tbsp (3/4 of a stick) cold butter

Directions:

Preheat oven to 350 degrees.  Lightly spray four ramekins with cooking spray.  In small bowl mix together flour, oats, sugar and brown sugar.  Cut in the cold butter and combine with a fork until crumbly.  Fill each ramekin with your choice of fruit (I used raspberries and blackberries, but any type of berry or pitted fruit would work well) and top with crumble mixture.  Place a piece of parchment paper on a baking sheet and set ramekins on top (easier clean up in case berries ooze out and caramelize on the baking sheet). Bake at 350 degrees for 25-30 minutes.  Let cool 5-10 minutes;  eat warm with a scoop of vanilla ice cream.
